This past weeks workouts straight up beat me up (especially Randy on Thursday). So, I deemed yesterday my active rest day which included lots of grocery shopping and lots of meal prepping.

Honestly though, TMI I get super hot a sweaty running around meal prepping with the oven, george foreman and microwave all going. So, it counts as active rest right?!
Truth is, I haven't HARDCORE meal prepped in a while because it really takes a lot of time and effort. However, it is so worth it after it's all said and done and your body and wallet will thank you during the week!
This week I am trying something new. Every morning I am going to do a protein + veggie packed shake instead of my usually chicken sausage and eggs and see how I feel. In an effort to get more leafy greens into my diet my goal is to go through 1 bag of baby spinach a week. Totally do-able. I'll keep y'all posted on how that goes.
So for this week...
Breakfast --- Here are the main ingredients I will use. I've got oats, PB, spinach, whey, banana, frozen mangos, a power green blend, strawberry banana blend and frozen pineapple chunks. Not pictured chia seeds and frozen cherries. P.S. What are y'alls thoughts on Vega Protein & Greens?
Lunch --- I prepped two different things because during the middle of my prep I decided on the shake for breakfast idea. So, two days I'm going to do eggs/chicken sausage, two days I am going to do turkey/sweet potato and one meal of sweet potato/chicken sausage.
Chipotle Sweet Potato Mash --- I popped three microwaved sweet potatoes in my ninja with a little bit of butter, salt, pepper, garlic powder, paprika and chipotle tabasco hot sauce. I hit puree and got a wonderful side dish for the week!
Dinner --- not pictured will be chicken + quinoa. My plan is took cook the chicken and quinoa tonight and then divide it out for the rest of the week. I'm also going to roasted broccoli or squash to add to this meal.
Whew! If I have some sweet struggles I bought a few Chobanis/Lara Bars/Kind bars to keep me sane. That's all I got for today. Cheers to staying on track!
