So. A few weeks ago I had a bacon & onion quiche from Whole Foods and I have been dreaming about it ever since. I'm positive it was about six thousand calories so I was determined to find a health, low cal quiche recipe that I can make in bulk and prep for breakfast during the week.
I found a recipe on Live Fit and the pictures pretty much convinced me to make it. I changed the recipe a little to fit what I had on hand.
>> I used normal egg whites instead of muscle egg
>> I used FlapJacked Buttermilk instead of Kodiak Power Cakes
>> I used regular mozzarella instead of fat free
Although I am still dreaming of my Whole Foods quiche. These little minis were the bomb. Perfect to heat up and eat on the go in the mornings or for an afternoon snacklet.
