Paleo Chicken Salad

In an effort to have a little diversity in my lunches I whipped up some paleo chicken salad to eat plain or in lettuce wraps. This salad is SO good and has no mayo or terrible ingredients. Enjoy!

Ingredients (approximately)
  • 1lb shredded chicken
  • 3 avocados
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped grapes
  • 1/2 cup chopped bacon
  • garlic powder
  • salt
  • pepper
  • lime juice
  • red pepper flakes

I put my chicken in the crockpot with onions, celery and chicken stock on high for 5 hours. Once done, shredded and cooled I threw my chicken in a bowl with all of the other ingredients and boom, that is all you do. What I love about this recipe is you can sub out and/or add in literally anything your heart desires! Also, the avocados give it a nice creamy texture so you don't even realize there is no mayo! I ate mine plain but you could eat this with veggies, crackers or on bread!
