Weekly Meal Prepping (ft. Crock Pot Sweet Potatoes)

Two days behind. Sorry guys! Woof. Lots going on over here in PCE's world. I'm just going to be totally honest and let the cat out of the bag. I blew it this past weekend food wise. I had way more junk than good foods. Might of had one to many pumpkin spice yogurt pretzels (aka crack) and a few too many scoops of sausage dip (throw hot sausage, salsa and cream cheese into a crock pot). So, my Advocare 10 day cleanse couldn't come at a more perfect time. I took my weight and measurements this Monday morning. I can't wait to compare 10 days from now and then again after my ShredHer cycle. So far day 3 of the cleanse and I am going strong with my Spark! I really haven't had any super bad cravings which is WEIRD for me.



The picture of my grocery haul looked pathetic so I will spare you this week and instead grace you with this pic of my nonfat PSL. I had some stuff left over from the previous week that I prepped with and also, this is a short week for me. I am going out of town this weekend so I didn't want to over buy and waste food.

This week...
Breakfast --- Spark and eggs + hot sausage (from my dip that I set aside) scramble

Lunch --- Tuna packs, almonds and/or oatmeal cups

Dinner --- Marinated chicken, crock pot sweet potato and green beans.

Post Wod --- Vega One, unsweetened almond milk, frozen banana and frozen strawbs.


Crock Pot Sweet Potatoes
I took the recipe from my favorite gal over at Paleomg. I just ordered her book and I am SUPER pumped. More on that later. She posted about crock pot sweet potatoes and I jumped all over it. For some reason I never thought to put whole sweet potatoes in the crock pot and let them sit all day. The outcome is glorious.



>> Wrap sweet potatoes in foil
>> Cook on low for 8 hours or high for 4.

Easy freaking peasy.
