Eatin Easy: Chili + Pumpkin Muffins































































It's no secret that I like to keep my meals simple and easy. I don't have time to make elaborate meals and meal prep my life away. On insta I see so many folks making complicated healthy meals with tons of different ingredients or making one hundred days worth of meal prepped food. It's aggressive. I think it makes healthy eating seem complicated to a newbie who is trying to figure it all out.

I choose easy and flavorful meals that are not time consuming. I have left overs for a few days and that is my 'meal prep' so to speak. This week I made an easy seven ingredient chili for dinner that ended up being left overs for work lunch. I also made three ingredient pumpkin flax protein muffins as a snack. Both took less than 30 minutes to make with a whopping 10 total ingredients.

You don't need to spend a bunch of money and buy thousands of groceries to be successful. Keep it simple and don't over complicate things.


Turkey Chili
- Pre-chopped frozen green peppers - Kroger hack
- Pre-chopped onion - Kroger hack
- Chili seasoning
- Dark red kidney beans - 2 cans
- Diced tomatoes - 2 cans
- Ground Turkey 93% lean
- Chicken stock - 3 cups

* Saute peppers and onions. Add turkey and cook until brown. Add chili seasoning, beans, tomatoes and chicken stock. Simmer for 30mins. Makes 6 servings. 25.8c / 5.5f / 23.4p

Chocolate Chip Pumpkin Flax Protein Muffins
- Kodiak Cakes Pumpkin Flax Mix
- Enjoy Life Chips - Optional
- WATER (lol)

* Mix 106g of mix with water. I like my muffins thick so I eyeball and don't add much water. Think a pancake type of consistency. Bake 12mins on 350. After the muffins cool add enjoy life chips on top. Boom done. Makes 6 muffins. 15c / 3f / 3.5p.

* You could totally add in extra protein to these muffins. I would suggest a vanilla whey.
