GF Sweet Potato Quinoa Chili

I saw this recipe on Iowa Girl Eats last week and KNEW I had to make it ASAP. I am always on the hunt for healthy simple recipes to make that does not involve my normal chicken, broccoli, turkey burger and eggs. I am on the lookout because every Wednesday night Andrew and I finally get to see each other so I make sure to go out of my way to make a yummy and healthy dinner for us. I refuse to make him eat my leftover meal prepped food! That would just be cruel!

This past Wednesday the chili was a total hit! I made it again tonight for this weeks meal prep (which is perfect as I am eliminating gluten from my diet this week!!)


Here is what I changed and took away from this recipe...

Ingredients
- 1lb lean turkey
- 1/2 onion
- garlic powder
- 2 small sweet potatoes
- 1 cup of chopped carrots
- trader joes taco seasoning
- 12oz baked beans
- 28oz crushed tomatoes
- 1 1/2 cup chicken broth
- 1/4 cup quinoa


In a nut shell I...
1. took out a lot of the quinoa 2. used taco seasoning 3. halved the onion 4. used garlic powder instead fresh 5. added carrots

It still turned out SO good. I loved the sweet potatoes the most. The best part about this meal is that it makes a TON and tastes even better the next day!!

Andrew and I topped ours with a little cheese, avocado and fritos. And by a little I mean Andrew almost ate an entire bag of fritos scoops by himself :O Whoops! Next time I think I will add green peppers instead of carrots. Also note this recipe makes a TON. I would half it if you are the only one eating on it.

You all should try this! It is super warm and hearty for this cold winter weather!
