Probably not a shocker to anyone but, I kind of over did the crock pot bbq chicken these past couple of weeks. So, last week I was on a mission to find different ways to fix chicken that I would like and would be great for leftovers. Salsa chicken is always great alternative but so is HOMEMADE CHICKEN NUGS. Amiright!?
1/ I cut all of my chicken into small chicken nugget sized pieces.
2/ Coated the cut up chicken pieces in egg whites.
3/ Then, coated the chicken in panko break crumbs with salt and pepper... I know there are added carbs in the panko, but a little but of crumbs go a long way!
4/ Bake at 400 for 30 minutes and voila!
Super easy and soooo good! To make it even easier and quicker you could just leave the chicken breast whole and coat and bake them. They go great with any veggie and are perfect as leftovers (if you have any left!!!!) if you are meal prepping.
